Green Tea

Tea comes from the plant Camellia sinensis.There are 3 main types of tea, categorized according to their oxidation levels (called the fermentation process):

1) Green tea.
2) Oolong tea.
3) Black tea.

Green tea leaves are steamed immediately after they are picked so that no oxidation occurs. Unlike green tea, oolong tea is partially fermented. Black tea leaves are allowed to oxidize as they are being exposed to warm, dry air, causing the leaves to darken.

Epigallocatechin gallate (EGCG), an antioxidant found in green tea is up to 100 times more powerful than vitamin C or E

    What about white tea? It is suppose to be the least processed tea. I have tried a couple of different ones and find them to be very good. I enjoy the light sweet taste. I especially like two doves white tea from http://www.tealaden.com.
